Not Boring, Tasty Chicken Baby Food Recipes

.Get your baby out of those bland Chicken and Turkey baby food meals.  Chicken and Turkey Baby Food doesn't always have to plain and boring.

Try some Chicken Lasagna, Cinnamon Sweet Potato Bake, or a Turkey Meatloaf with Hidden Spinach. Chicken Baby Food Recipes don't always need to be chicken mixed with fruit purées or purées of veggies and meats.  I'm posting Yummy Chicken Baby Food Recipes for Older Babies that may be used for Homemade Baby "Meals".  These "baby" recipes are recipes that the whole family may enjoy and eat. 

Please note however that some ingredients may not be suitable for a baby under 12 months of age.

Chicken or Turkey Meatloaf with Hidden Spinach

1 1/4 pounds ground turkey
1 cup spaghetti sauce, divided
1/2 cup Italian-seasoned bread crumbs
1/2 cup finely chopped onion
2 eggs slightly beaten
2 tablespoons grated Parmesan cheese
1 package (10 oz.) frozen chopped spinach, thawed and well drained
3/4 cup low-fat shredded Mozzarella cheese

Mix the ground turkey, 1/4 cup spaghetti sauce, bread crumbs, onion, eggs, Parmesan cheese in medium bowl.

Put half of turkey mixture into a loaf baking pan. Create a "trench" as you will be adding the spinach to it. Leave about 1–inch trench in the center of mixture and about 1-inch on all sides.

Mix the spinach and Mozzarella cheese together then transfer and fill the Trench
Fill the trench with the remaining meat mixture

Bake about 45 to 50 minutes in a 350°F preheated oven to  Then spoon the remaining spaghetti sauce over meat loaf. Bake the meatloaf for about 15 minutes more. Let stand 10 minutes.Maybe made into meatballs though this is labor intensive.

SERVE WITH:  Brown Rice and Squash or Orzo with Tomato & Parmesan

Chicken Potato Chowder

1/3 C. diced and cooked boneless breast or ground chicken
1/4 C. cubed and cooked potato
3 T. shredded mild Cheddar or American cheese
1/4 C. milk
2 tsp. butter
Peas, carrots and/or corn

Mix chicken, veggies, potato, milk, and butter in a small saucepan. Simmer over low heat for 10 minutes. Stir in cheese. Serve warm.

SERVE WITH:  Spoon chowder into hollowed out round Boule bread bowls.  Watch your older baby dig in.

Cinnamon Chicken Sweet Potato Bake

1 2 or 3 pound roasting chicken
4 medium sweet potatoes, scrubbed and sliced
Olive Oil
2 pats of butter
cinnamon
2 tsp. brown sugar
1 cup chicken stock

Preheat oven to 400 degrees F
Place washed and cleaned chicken in a baking pan that has been brushed with olive oil
Peel skin around breast portion back and insert the pats of butter
Add 1 cup chicken stock (visit our Making a Natural Stock article to learn how to make a good homemade stock.) to the pan
Place sweet potato slices around the chicken
Sprinkle sweet potatoes lightly with cinnamon and brown sugar
Lightly sprinkle the top of the chicken with cinnamon.

Bake chicken in the oven for approx. 1 1/2 to 2 hours.  Set timer for 45 minutes and remove chicken, cover with foil and cook for 30 minutes more.  Remove chicken again, take off foil and let the chicken finish baking.

SERVE WITH:  VERY nice with a butternut squash risotto and green beans.

Chicken Lasagna

3 skinless, boneless chicken breast halves
6 uncooked lasagna noodles
1/4 cup Natural Chicken Broth
1/4 cup hot water
1 (8 ounce) package cream cheese, softened - (we prefer ricotta.)
2 cups shredded mozzarella cheese
1 (26 ounce) jar spaghetti sauce (Roasted Garlic & Basil)

Cook lasagna noodles for 8 to 10 minutes, or until al dente. Drain, rinse with cold water, and set aside. Meanwhile, boil the chicken (about 20 minutes) in a saucepan with enough water to cover the chicken (don't drown it.).  When chicken is cooked, take it from the saucepan and then shred it. (cool it a bit for easier shredding and use a more coarse chop on your blender or food processor if you don't have a shred feature).
Preheat oven to 350 degrees F. In a large bowl, mix the chicken with the broth, cream cheese, and 1 cup mozzarella cheese. Spread 1/3 of spaghetti sauce in the bottom of a 9 inch square baking dish.


Cover with the chicken mixture, and top with 3 lasagna noodles; repeat. Top with remaining sauce, and sprinkle with remaining mozzarella cheese. Bake for 45 minutes in the preheated oven.

 

SERVE WITH: Steamed Zucchini and Bread
