Golden Flax Blueberry Farina Muffins – What a name, what a tasty delight!
I’ve been assembling muffin recipes from all over the baby/toddler site to create one page (will be published soon). This is by far one of the best and you should try these muffins for your little one. These have been a longtime fave of my boys since they could pinch & mash with their little gums. You can break them up easily into “crumbs” for little pinching fingers; add the crumbs to yogurt (oh yeah, it’s a mess!) too! Dense but not too moist nor too dry, your 8 month+ baby who likes textures should find these very tasty.
Golden Blueberry Muffins
Ingredients
1/4 cup golden flax meal
3/4 cup farina (wheat cereal)
1 1/4 cup of flour
1/4 cup or 1/2 cup raw-turbinado sugar (these I made with 1/2 cup but they taste fine with 1/4 cup)
1 tablespoon baking powder
1 egg
3/4 cup milk (you can use soy milk)
1/4 cup oil (or 1/4 applesauce but the texture will be more springy instead of dense)
2 teaspoons vanilla
2 teaspoons cinnamon
1/2 cup of blueberries
Directions
Preheat oven to 400F
Toss all ingredients together and mix until all is moist.
Lightly oil muffin tins or use inserts
Spoon into muffin tins, filling 1/2 way
Bake for approximately 20-25 minutes
Yield – 12-18 muffins depending on size of muffin cups

do we use a whole egg or just the egg yolk?

1 whole egg. You could use 2 egg yolks if you prefer.

These look great! I haven’t bought farina in a while – do you think maybe oatmeal would work? or something closer to farina – maybe oat bran?

Where do you buy farina? I looked for it today at Whole Foods and could not find it. I looked in bulk and then in the cereal section. I also couldn’t find the golden flax meal but I figure I can grind my own and bought golden flaxseeds today. All I’m missing is the “wheat cereal”.

Hi Amy, I find it in the cereal aisle of both “natural” grocery stores and chains like Hannaford, Shaw/Star, Kroger et al.
Cream of wheat cereal is actualy farina. You could buy a box of Cream of Wheat but don’t buy the instant!

Natalie, I’m not sure if oat bran would work well. It might make a really dense and heavy muffin, though this is not necessarily a bad thing! The texture of these muffins is a bit like corn muffins but not as gritty (hope that makes sense!). After writing that, I bet you could use corn meal…I’ll give it a go later this week!

These were great! I used half all purpose flour and half whole wheat flour, but didn’t change a thing other than that. Might try making with apple instead of blueberries next time just for variety!

Leilana, good idea with the apples! I followed the recipe and thought the batter seemed a little dense so I added a 1/4 cup of maple yogurt and a dash more of milk (1/8 cup, maybe) and they came out very moist! mmmmmm…
